Have you tried approaching a trans folk and telling them “hey I’ll teach you martial arts to defend yourself (in exchange for casseroles)”?
It seems a little bit short sighted in the sense that

There might be some sort of community organizing in your area, whether it’s a self help group or a casual get together. Maybe there is a local trans discord. If you have any queer community outreach spaces, they’re a good place to start. Otherwise, you could contact people through services offering gender affirming care like planed parenthood. I found a local trans meetup because they had flyers at my speech therapist’s office. From my experience, self defense classes for trans people can become fairly popular because it can be scary out there. Once you manage to reach out to people and they find you to be ok, they will probably bring friends. We tend to stick together.

- Just walk around outdoors. Trans people are too anxious to drive and you can spot us on sight, so that’s a pretty good way to find us.

I guess part of me was thinking about getting LGBT people to self-select as interested in BJJ or kickboxing. Wrestling with strangers is already a big ask of a random person who has everything going for them.

What kind of casserole do you want, and what do you recommend for someone with severe dyspraxia? I do have a pair of sai around here somewhere. Nunchaku were a mistaaaaaaaake.
The key with nunchaku, flails, and the like is to not let your elbow bend enough that the business end can reach your head or trunk. As long as your arm is held out enough, you shouldn’t be able to injure yourself with a full-on hit. Power the swings by turning the whole body, keeping the arm out and relatively stiff.
(Naturally there are exceptions and nuances that are best explored with a teacher, I’m just giving a tutorial on how to safely experiment.)
“Be like water” is for rigid weapons like the sai; for flexible weapons like nunchaku it is advisable the body move as more of a solid unit.

My specialization is in combat sports so I don’t know much that has to do with weapons. In addition, all that I know about dyspraxia can be summarized in a google search, so please don’t take it as someone familiar with the symptoms.
But I would go for judo. A good judo school would have a lot to help you with. They’ll help you fall correctly immediately which is like a perma buff everywhere. The culture is about mutual benefit and welfare. You could expect women, children, and the elderly to be hanging around. I bet they’d have a curriculum they could adjust if you are infirm. There is a ruleset for the blind so they have considerations. There are competitions based around doing the moves correctly instead of fighting at full throttle so you decrease the risk of hurting yourself and others.
I almost said boxing, but I think they’d set you up right over there.
