    Man, that meal looks delicious, thanks for the recipe. I might have to try it out. I really miss a good tofu meal, my mom used to use tofu in all kinds of stuff and it seems like she’s dialed it back as she’s getting older and all the grandkids seem to now be opposed to her vegan food she used to make so regularly. I’d kill for a bit of her scrambled tofu right now. Just like scrambled eggs except somehow better! She makes a mean tofu pudding also. Not my mother’s cooking, but a local Chinese place had some amazing fried tofu you could choose as a protein, kind of defeats the healthy aspect of it I guess, but I’ll be damned if it wasn’t delicious! My oldest son used to love to eat just eat raw tofu cubed with a dash of soy sauce on it when he was in diapers, now at 22 he seems to have went to the dark side and not come back :(

      tyyy, it is yummy :) (and the socks are quite cozy)

      if you do wanna try it out, we personally used avocado oil for frying, green onion as the form of onion (lots of it in our garden!), and some thai chilis plus a jalapenno. the peppers seemed to play fairly nice with the rice noodles; we served by putting some noodles in a bowl then the fry on top, then a little soy sauce of course!!

      we loosely based it off of this recipe (shown on the computer monitor)

      also thnx for sharing about your family’s cooking! sad that the younger members deflected from it, but definitely interesting to hear about.

      the socks we got from our own mother, not really as a gift but she had them for a while and they just kinda ended up in our wardrobe lol. don’t worry she has tons of other queer paraphernalia for pride month!!! long socks are very very comfy though.
