Alrighty. Did more research than I should’ve, but based on the grail knights armor, it’s certainly not the 11th century:
He’s wearing a gambeson, which started becoming a thing in the 12th century (sadly, the cross on his gambeson is nonsense, so I don’t know what order he’s from)
He has a coif that’s not integrated into a hauberk, which is also a later thing (earliest depictions I found that could’ve been separate coifs are from the 12th century)
He has, as far as I can guess, an Oakeshott type XI sword, which again, is a 12th century thing
And lasty his mail gauntlets, which gave me some confusion. Mail mittens and gauntlets that were integrated into the hauberk were a thing in the 13th century. But separate ones only started existing around 1300, which puts us into the 14th century, and more importantly, after the fall of Acre
So my conclusions is: Based on the gauntlets and the nonsensical cross on his gambeson, I’m pretty sure that this guy is just…

The First Crusade lasted from 1095, as pointed out specifically by the knight in Rob MacGregor’s novelization, until 1099. In the novel, however, Jones says 800 years instead.
