I think when you work with a fryer the normal reaction is to want to fry everything you can just to see what happens. Of course the old men i work with are like “why are you frying beans”
because you have to fry them twice
Fun fact but you can take cooked bean puree and work it into flour and pound it super flat and make a bean chip
It was really good when i did that with lentils to make papadams and i think better when i used cajun creole black eyed peas
