        I was looking at those but they looked like cakes to me!

        Rainbow cookies are typically composed of layers of brightly colored, almond-based sponge cake (usually almond paste/marzipan), apricot and/or raspberry jam, and a chocolate coating.

        Oh, they are cakes that are just called cookies?

          They have a very dense sponge texture, and they’re sold by the pound with other Italian cookies at the market, so it skirts the line between cookie and tiny cake.

          Is there a category for tray bake sweets? A fluid zone between lemon bars, brownies, and cookies.
